I don't have the book with me, but I'm pretty sure the recipe divides easily by 1/5, making 5 cupcakes, perfect for dessert for a party of 4. The cake itself is incredibly rich and moist and flavorful, and so easy! I love it. Definitely going to add this to my repertoire. (I guess just as with stuffed poultry, stuffing should be separated from its vessel before refrigerating to ensure thorough chilling of the stored stuffing.) I've put peppers on a gas burner until the outside is charred. For example, you can cook potatoes in duck fat. It is a healthier fat than butter.<br /><br />I believe Martha's book contains a recipe for duck confit in which you could use that duck fat.<br /><br />I plan to work my way straight through the book because (sadly, at age 57) I am a beginner cook and because I believe Martha designed the lessons to be completed in order. I'm hoping that completing the recipes in order will also prepare me to conquer that timing issue you encountered. How many times I told my husband that Thanksgiving dinner would be ready at 7 P.M. only to end up eating at midnight!<br /><br />I'm going to check out your blog as I go so that I can avoid the pitfalls you encounter. It took longer and some of them got beautiful and brown and some of them didn't. I wish I could figure out what I'd done... Also the pan was so messy at the end, I couldn't "wipe it with a paper towel" and had to just use a new one to make the butter sauce, which took longer than the recipe said. Still, the results were delicious.
